Maida........ 1 cup
Wheat Flour (Atta)......1 cup
oil ...............2 tbsp
rice flour.......1/2 tsp
salt to taste
Mix wheat flour, maida, salt together .
Add water make a smooth & elastic dough and set aside covered with moist muslin cloth for 1/2 an hour.
How to proceed :
Make 2 small balls of the dough and apply oil and rice flour on one side and put them together with the oil side facing each other. Roll it with a rolling pin and form a thin roundel of about 12" diameter using little dry rice flour (it should be thin as a tissue)
Heat the flat griddle or Tava .
Place the romali roti carefully over it and cook till they puff up and you will be able to separate the two layers Fold it like a handkerchief.
serve hot with Indian curries
